Hazelnuts, walnuts, almonds, pecans; plus some nice rolled oats with cinnamon and vanilla. Honestly not much to it at all - maybe I should have toasted the nuts..? - but a nice tasty late morning meal to follow coffee.

Dark rum negroni variation - just swapped out the gin for a nice El Dorado 12. Mostly an excuse to practice my ice carving, really. (Yes, the orange peel is a little over the top. Great for impressing while serving but a bit awkward to drink.)

- 30ml (1oz) dark rum
- 30ml Campari
- 30ml vermouth
- 2 dashes Angostura bitters
- 2 dashes orange bitters

Stir with ice to chill, pour into a chilled coupe, garnish with an ice cube and orange peel. Make sure to spritz with orange oils from the less successful orange peel strip. Drink slowly.

I've been working on my cocktail presentation a bit too. This is a clover club with muddled blackberries, mostly for colour but also for the lovely taste.

I used a reverse dry shake to tilt the egg white more towards foamy than silky, but it took almost a full five minutes to strain out the blackberry solids along with the ice! Lesson learned: use the citrus clamshell juicer with a layer of cheesecloth to extract the liquid from the blackberries well beforehand, don't muddle them in. Live and learn!

(My photo technique also needs work: I was trying to focus on the fruit garnish, not the tip of the nearest cocktail pick. Dangit!)

Mixing 30ml (1oz) of the syrup with ~100ml of club soda makes a delightful drink, and a lime wheel with a sprig of clapped mint brings a nice aromatic accent. This would be even tastier with some lemon in it.

Took Smitten Kitchen's one-pan Farro (onion, grape tomatoes, garlic, salt, red pepper), and added turmeric, carrots, ricotta, and kale for a creamy, heartier feel. Made a marinade with some lamb chops: lemon, olive oil, coriander, fennel, salt, garlic. Pan-fried the chops, combined, topped with a little more ricotta. Mmmm.

Fingerling potatoes

Microwave on high for about 6-7 minutes, flip over, repeat. Slit open; season with butter, pepper, salt, thinly chopped chives.

Tomatoes

Wash, halve, season with salt and pepper. Toss with crumbled feta.

Asparagus

Wash; trim fibrous ends; chop into bite sized pieces. Toss in olive oil. Add a few cloves of smashed and diced garlic, then cover with microplaned parmesan cheese and fry.

Toss asparagus after the bottoms have browned; squeeze over about half a lemon worth of juice. Add the other half of the parmesan cheese, then pop into the 400°F oven for 18-20 minutes.

Once you remove the pan from the oven, squeeze over another half a lemon or so.

Salmon

Heat a half sheet tray in an oven set to 400°F. (This will aid with heat conductivity and also catch any leaks.) Lay out two sheets of parchment paper or aluminum foil near prep area.

Dice two celery stalks, two shallots, a few cloves of smashed garlic; lay in a flat layer on the foil sheets. Tear in a good amount of dill. Salt generously. (The goal here is mostly to add aroma and steam.) Lay skin-on salmon pieces over the vegetables; salt well; top with 3-4 thin lemon slices and more dill.

Tightly seal parchment/foil packets. Lay atop heated sheet tray. Cook for 16-20 minutes depending on fish thickness and desired doneness level.

i was gonna cook pasta for dinner but i didn’t have lunch til 4pm so now i’ll maybe just have toast? idk.

last night i sautéed some veg to try and counteract the weekend of breakfast and snack foods. i think next time i’ll attempt to crisp up the potatoes before i add the silverbeet.

It worked out pretty good! All the things I like, none of the things I get in takeout that I don't like (celery)

It's about 4 oz of sliced up steak, 6oz of shrimp, a head of broccoli, 2 carrots, 6 quartered mushrooms, and a small can of water chestnuts, with a sauce made of: minced garlic and ginger, vegetarian oyster sauce, and chicken stock (with cornstarch)

There's also white rice under there

Food, candy, recipe 

Second batch of sesame candy done! I used this simple recipe healthynibblesandbits.com/easy (though could not get black sesame seeds). This time I toasted the seeds a bit longer (I think I under-did it last time), and added a pinch of brown sugar. It only takes a few minutes and is so tasty.

They recommend silicone mats, but parchment paper over a cutting board worked just fine for me. If you do not have a rolling pin, any round can or bottle works - I used a wine bottle.

Individual Beef Wellington (it's just a 7oz filet mignon in there) came out pretty good, I'm glad I can make something complicated once in a while
